Poached Chicken and Italian-Style Chicken Broth
Ingredients
- 1 chicken, about 4.5 lb (2 kg)
- 2 to 3 carrots, peeled
- 2 to 3 onions, peeled
- 2 tomatoes
- 4 garlic cloves, peeled
- 1 leek, green part only
- 2 cloves
- 2 bay leaves
- 1 Parmesan cheese crust (optional)
Instructions
- Place all of the ingredients in a large pot. Cover with cold water. Season with salt and pepper. Bring to a boil.
- Using a spoon, skim, if desired. Simmer over low heat for 2 hours or until the chicken is fork-tender. Adjust the seasoning.
- Strain the broth. Compost the residue. Transfer the broth to airtight containers. Let cool. Refrigerate to let the fat rise to the surface and harden, if desired. The broth will keep for 5 days in the refrigerator or 3 months in the freezer.
