Russian-Style Marshmallow Cake
Ingredients
- 1/2 cup (125 ml) unbleached all-purpose flour
- 1/2 teaspoon (2.5 ml) baking powder
- 2 egg yolks
- 1 egg
- 1/3 cup (75 ml) sugar
- 2 tablespoons (30 ml) canola oil
- 3/4 cup (180 ml) sweetened condensed milk
- 1/4 cup (60 ml) unsalted butter, melted and cooled
- 1 tablespoon (15 ml) powdered gelatin
- 2 tablespoons (30 ml) cold water
- 2 egg whites
- 3/4 cup (180 ml) sugar
- 1/4 cup (60 ml) water
- 1/2 cup (125 ml) icing sugar
- 1/4 cup (60 ml) unsalted butter
- 1/4 cup (60 ml) cocoa powder
- 1/4 cup (60 ml) milk
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter and line a 20-cm (8-inch) springform pan with parchment paper.
- In a bowl, combine flour and baking powder.
- In another bowl, beat egg yolks, egg and sugar with an electric mixer until mixture forms a ribbon, about 10 minutes. Drizzle in oil. With a spatula, gently fold in dry ingredients. Pour into prepared pan. Bake for about 20 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool.
