Tofu Spread
Ingredients
- 3 cups (750 ml) fresh spinach
- 1/2 lb (227 g) firm tofu, cut into large cubes
- 2 green onions, cut into chunks
- 1 clove garlic, peeled
- 1/4 cup (60 ml) mayonnaise
- Salt and pepper
Instructions
- In a food processor, purée spinach, tofu, green onions and garlic until smooth, about 3 minutes, scraping the sides and bottom of the processor a few times. Add mayonnaise and mix thoroughly. Season with salt and pepper.
- Serve as a spread or in a sandwich.
