Creamy Cheese Gnocchi with Mushrooms and Bacon

Ingredients

  • 1 package 500 g store-bought gnocchi
  • 5 slices bacon, cut into pieces
  • 8 oz (227 g) sliced white button mushrooms
  • 3/4 cup (180 ml) chicken broth
  • 1/2 Caprice des Dieux cheese, rind removed and cut into pieces (or 65 g / 2 oz any double cream brie)
  • Pepper

Instructions

  1. In a pot of salted boiling water, cook gnocchi until they rise to the surface. Drain.
  2. Meanwhile, in a large non-stick skillet, melt bacon. Add mushrooms and cook until bacon and mushrooms are golden brown. Add cooked gnocchi and cook until lightly browned. Deglaze skillet with broth and bring to a boil.
  3. Remove skillet from heat and add cheese. Stir until melted. Season with salt and pepper.
