Beer Soup
Ingredients
- 1 1/2 cups (245 g) shallots, chopped
- 1 garlic clove, finely chopped
- 3 tbsp butter
- 1 cup (250 ml) beer
- 3 cups (750 ml) chicken broth
- 1 bay leaf
- 2 tbsp (30 ml) honey
- 1 cup (250 ml) diced stale bread, firmly packed
Instructions
- In a saucepan, soften the shallots and garlic in the butter. Add the remaining ingredients. Cover and simmer for 20 minutes. Remove the bay leaf.
- In a blender, purée the soup until smooth. Season with salt and pepper.
