Christina Blais’ Avocado Frosting
Ingredients
- 1/4 cup (60 ml) cocoa powder
- 1/4 cup (60 ml) water
- 1 avocado, peeled and diced
- 2/3 cup (150 ml) icing sugar
- 1/2 teaspoon (2.5 ml) vanilla extract
- A pinch of salt
Instructions
- In a microwave-safe measuring cup, combine the cocoa powder and water. Cook for 30 to 60 seconds, or until the mixture reaches a boil and thickens. Stir well and let cool.
- In a food processor, purée the avocado with the sugar, vanilla, and salt until very smooth. Add the chocolate mixture and pulse until uniform in colour. Use as a cake frosting or as a pudding.
