Two-Celery Purée with Parmesan

Ingredients

  • 6 cups (1 kg) celery root, peeled and cubed
  • 3 cups (405 g) chopped celery
  • 6 cloves garlic, peeled
  • 1/4 cup (55 g) butter
  • 1/2 cup (35 g) grated Parmesan cheese

Instructions

  1. Place a steamer in the bottom of a pot. Add water. Cook the celery root, celery and garlic, covered, for about 20 minutes or until the vegetables are tender.
  2. In a food processor, purée the vegetables with the butter and Parmesan until smooth. Season with salt and pepper.
