California-Style Chicken Salad (2)
Ingredients
- 3 tablespoons (45 ml) mayonnaise
- 1/3 cup (75 ml) plain yogurt
- The flesh of 1/2 mango
- 1 tablespoon (15 ml) Dijon mustard
- Juice of 1/2 lemon
- Tabasco sauce, to taste
- Salt and pepper
- 1 head Boston lettuce
- 6 cups (1.5 litres) baby spinach
- 2 avocados, pitted, peeled and sliced into strips
- 3 skinless chicken breast halves, cooked and cooled, cut into strips
- 1 1/2 mangoes, peeled, pitted and cut into strips
- 1/2 cucumber, diced
- 1/2 red onion, thinly sliced
- 3/4 cup (180 ml) pecans, lightly toasted
Instructions
- In a blender, purée all the dressing ingredients until smooth. Set aside.
- Divide the lettuce and spinach among 4 plates. Form a star alternating the avocado, chicken, and mango. Add the cucumber and onion. Drizzle with the dressing and garnish with pecans.
