Skate Wings with Watercress Sauce

- 3 lbs (1.5 kg) skate wings, skin removed on both sides, cut into 4 or 8 pieces, rinsed, and patted dry
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) butter
- Salt and pepper
- 1 small onion, finely chopped
- 2 cloves garlic, chopped
- 2 tablespoons (30 ml) olive oil
- 4 cups (1 litre) watercress
- 1/4 cup (60 ml) chicken broth
- 1/2 cup (125 ml) 35% cream

- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper.
- In a large non-stick skillet, lightly brown the fish pieces on both sides, two pieces at a time, in half the oil and butter. Season with salt and pepper. Place on the baking sheet. Bake for about 20 minutes or until the fish flakes easily from the bone.
