Chewy Brownies
Ingredients
- 3/4 cup (115 gl) unbleached all-purpose flour
- 1/4 cup (25 g) cocoa powder, sifted
- 1/4 tsp salt
- 6 oz (170 g) dark chocolate, chopped
- 3/4 cup (170 g) unsalted butter, cubed
- 1 cup (210 g) sugar
- 1 tsp (5 ml) vanilla extract
- 3 eggs
Instructions
- With the rack in the middle position, preheat the oven to 325°F (170°C). Butter an 8-inch (20 cm) square baking pan and line with a strip of parchment paper, letting it hang over two sides.
- In a bowl, combine the flour, cocoa powder and salt.
- In another bowl placed over a saucepan of simmering water, melt the chocolate and butter. Remove the bowl from the heat and whisk in the sugar and vanilla. Add the eggs, one at a time, and whisk for 2 minutes. Gently mix in the dry ingredients. Spread the batter evenly in the baking pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the centre of the brownies comes out with a few crumbs attached (the toothpick should not be completely clean). Let cool in the pan, 2 to 3 hours. Unmould and cut into squares.
