Baked Garlic Cod on a bed of Wilted Pesto Spinach
Ingredients
- 1 sheet parchment paper
- 8 cloves garlic, halved and lightly crushed
- 1/4 cup (60 ml) olive oil
- 1/4 cup (60 ml) white wine
- 2 tablespoons (30 ml) chopped parsley
- 2 teaspoons (10 ml) white wine vinegar
- 1 1/2 lb (675 g) cod fillets
- Salt and pepper
- 1 tablespoon (15 ml) olive oil
- 2 tablespoons (30 ml) pesto
- 16 cups (4 litres) baby spinach
Instructions
- With the rack in the middle position, preheat the oven to 120 °C (250 °F).
