Spiced Lamb Chops with Vegetable Couscous
Ingredients
- 1/4 cup (60 ml) olive oil
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- Pinch of ground cinnamon
- 8 lamb loin chops, about 1 1/2 inches (3.5 cm) thick
- Salt and pepper
- 1 onion, finely chopped
- 2 tbsp (28 g) butter
- 1 red bell pepper, seeded and finely diced
- 1 zucchini, finely diced
- 2 cloves garlic, finely chopped
- 1 1/2 cups (375 ml) chicken broth
- 2 tbsp dried currants
- 1 1/2 cups (300 g) couscous
- 1/4 cup (11 g) parsley or cilantro, chopped
Instructions
- In a glass dish, combine the oil and spices. Generously season with salt and pepper. Add the chops and coat thoroughly with the marinade. Marinate in the refrigerator for 15 minutes, or overnight.
- Preheat the grill, setting on high. Oil the grate.
