Mexican-Style Dip

Simple guacamole is taken to the next level with this nacho dip recipe. After making an avocado purée, top it with sour cream and salsa, as well as crunchy vegetables and grated cheddar cheese. Served with corn chips, it’s the perfect snack for watching sports on TV, or as a fun, colourful aperitif.

Ingredients

  • 5 very ripe avocados
  • 1/2 tsp (2.5 ml) Tabasco-style sauce
  • 1 1/2 limes, juiced
  • 1 cup (250 ml) sour cream
  • 1 cup (250 ml) salsa
  • 1 small red bell pepper, seeded and cut into small dice
  • 1 Lebanese cucumber, cut into small dice
  • 1 cup (100 g) sharp cheddar cheese, grated
  • 1/4 cup (10 g) cilantro, finely chopped
  • Corn chips, for serving

Instructions

  1. In a bowl, using a potato masher, purée the avocados with the Tabasco and lime juice until smooth. Season with salt and pepper. Spread the guacamole out in a shallow serving bowl, making a well at the centre.
  2. Top the guacamole with the sour cream, salsa, bell pepper, cucumber, cheese and cilantro. Serve soon after assembling. Serve with corn chips.
