Sweet and Sour Pork Meatballs with Plums
Ingredients
- 1 red plum, pitted and diced
- 1 cup (250 ml) water
- 1/4 cup (60 ml) sugar
- 2 tablespoons (30 ml) rice vinegar
- 1 tablespoon (15 ml) finely chopped fresh ginger
- 1 teaspoon (5 ml) sambal oelek (optional)
- 2 cloves garlic, finely chopped
- 1 lb (454 g) ground pork
- 1/3 cup (75 ml) breadcrumbs
- 1 egg
- 1 tablespoon (15 ml) soy sauce
- 2 tablespoons (30 ml) canola oil
- 2 carrots, peeled and thinly sliced diagonally
- 2 zucchini, cut into 1/4-inch (1/2-cm) thick half-rings
- 1 onion, finely chopped
- Salt and pepper
Instructions
- In a saucepan, bring all the ingredients to a boil and simmer until the plum falls apart and the sauce is syrupy, about 10 minutes. Set aside.
