Ingredients

  • 1 1/2 cups (225 g) unbleached all-purpose flour
  • 1 1/2 cups (150 g) quick-cooking oats
  • 1/2 tsp baking soda
  • 1 pinch salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (160 g) brown sugar
  • 1 egg
  • 2 cups (370 g) ripe plums, pitted and diced (about 6 plums) (see notes)
  • 1/2 cup (105 g) sugar
  • 2 tsp cornstarch

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter an 11 x 8-inch (28 x 20 cm) glass baking dish and line with a strip of parchment paper, letting it hang over all four sides.
  2. In a bowl, combine the flour, oats, baking soda and salt.
  3. In another bowl, cream the butter and brown sugar with an electric mixer. Add the egg and mix until smooth. Using a wooden spoon, stir in the dry ingredients. Spread two-thirds of the dough along the bottom of the prepared dish, pushing it slightly up the sides of the dish.
  4. In a third bowl, combine the plums, sugar and cornstarch. Spread over the dough in the baking dish. Coarsely crumble the remaining dough over the fruit.
  5. Bake for 45 minutes or until the dough is nicely browned. Let cool for 15 minutes before unmoulding. Cut into squares.
