Bacon and Onion Roasted Potatoes
Ingredients
- 6 large russet potatoes, scrubbed clean and halved crosswise
- 6 slices bacon
- 1 onion, cut into 1/4-inch (1/2 cm) thick slices
- Butter, to taste
- Salt and pepper
Instructions
- Preheat the grill, setting the burners to high.
- Generously season the potatoes with salt and pepper.
- Place a folded slice of bacon and a slice of onion between
- the two halves of each potato.
- Individually wrap each potato in aluminum foil.
- Place on the grill, close the lid and cook for about
- 45 minutes, or until the potatoes are tender. Serve with butter.
