Butterflied Chicken with Honey and Citrus
Ingredients
- 1 whole chicken, about 4 lbs (1.8 kg)
- 1/2 cup (125 ml) orange juice
- 1/4 cup (60 ml) honey
- 1 clove garlic, finely chopped
- Grated zest of 1 lime
- Grated zest of 1 lemon
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (2.5 ml) ground black pepper
Instructions
- On a cutting board, with a chef's knife or kitchen shears, cut along the chicken backbone to open it flat. Gently lift the skin from the chicken breast and thighs without tearing it, to allow the marinade to permeate. Set aside.
