American-Style Pancakes
Ingredients
- 2 cups (300 g) unbleached all-purpose flour
- 2 tsp baking powder
- 1/4 cup (55 g) sugar
- 2 eggs
- 2 cups (500 ml) milk
- 1 tsp (5 ml) vanilla extract
- Butter, for cooking
Instructions
- In a bowl, whisk together the flour and baking powder. Add the remaining ingredients and whisk until the mixture is smooth.
- Heat a non-stick pan over medium heat. When the pan is hot, brush with butter. For each pancake, pour about 1/4 cup (60 ml) of batter into the pan. Using the back of a spoon, spread out the batter to get a pancake about 6 inches (15 cm) in diameter.
- Cook the pancake for 1 to 2 minutes per side. Flip with a large spatula when bubbles appear in the centre of the pancake or the edges appear cooked. Lower the heat, as needed, to give the batter time to cook through without over-browning.
- Keep the pancakes warm on a baking sheet in an oven preheated to 200°F (95°) while you cook the remaining pancakes, or serve them up as they’re cooked.
- Drizzle with maple syrup, if desired.
