Asian-Style Chicken Cutlets with a Cucumber Salad
Ingredients
- 4 skinless, boneless chicken breast halves
- 1/2 cup (125 ml) 10% plain yogurt
- 1/4 cup (60 ml) peanut butter
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (15 ml) lime juice
- 1 tbsp (15 ml) honey
- 1 clove garlic, finely chopped
- Sambal oelek, to taste (optional)
- 2 small English cucumbers, peeled
- 1/2 cup (125 ml) 10% plain yogurt
- 1 green onion, finely chopped
- 1 tbsp (15 ml) lime juice
- 1/2 clove garlic, finely chopped
- 1/4 cup (11 g) chopped cilantro
- 2 tbsp (19 g) roasted peanuts, crushed
- Salt and pepper
Instructions
- On a work surface, cut each chicken breast into two or
- three cutlets. Cover with plastic wrap and slightly flatten
- with a mallet or rolling pin. Set aside.
