Grilled Beef Ribs Smothered in Cola Barbecue Sauce
Ingredients
- 6 lbs (2.7 kg) beef ribs, cut between each bone (about 12)
- 8 cups (2 litres) cola
- 1 tablespoon (15 ml) black pepper, crushed
- Water, as needed
- 1 onion, finely chopped
- 2 tablespoons (30 ml) butter
- 1 clove garlic, finely chopped
- 1 tablespoon (15 ml) dry mustard
- 1 tablespoon (15 ml) paprika
- A pinch crushed red pepper flakes, to taste
- 1/2 cup (125 ml) ketchup
- 1/4 cup (60 ml) white vinegar
- 3 tablespoons (45 ml) molasses
- Salt
Instructions
- In a large pot, place the ribs, cola, and pepper. Add water, as needed, to cover the meat. Bring to a boil. Cover and simmer very gently for 2 hours and 30 minutes to 3 hours or until the meat falls off the bone. Drain the meat and keep 250 ml (1 cup) of the cooking liquid to prepare the barbecue sauce.
