Berries with Cream Jello
Make the most of strawberry and raspberry season by making this easy recipe with the kids. Made of fruit-juice-based jello, cream and sugar and topped with berries, this dessert is perfect for partaking of nature’s candy all summer long.
Ingredients
- 1 packet (7 g) gelatin (2 ½ tsp/12 to 13 ml)
- 1 ¾ cups (430 ml) mixed berry juice, cold
- ½ cup (125 ml) 35% whipping cream
- ½ cup (105 g) sugar
- ½ cup (125 ml) 35% whipping cream
- 1 tbsp sugar
- ½ tsp (2.5 ml) vanilla
- ¾ cup (100 g) fresh raspberries
Instructions
- In a small bowl, sprinkle the gelatin over ¼ cup (60 ml) of the juice. Let bloom for 5 minutes.
- In a small pot, bring the remaining juice to a boil with the cream and sugar. Remove from the heat. Add the gelatin and whisk until completely dissolved.
- Divide the mixture among four small glasses or dessert cups. Cover and refrigerate for 6 hours or until the jello has set. The cream will separate and rise to the surface.
