Pork Skewers with Coconut Rice

Bring joy to everyone this summer by grilling this classic: skewers! Made using an affordable pork loin roast, cut it into cubes and then marinate in a mix of fish, soy and hoisin sauces. Serve with coconut rice for a taste of vacation on your plate.

Ingredients

  • 1 ½ lb (675 g) boneless pork loin roast, fat trimmed, cubed
  • 2 tbsp cilantro stems, chopped
  • 1 tbsp brown sugar
  • 1 tbsp (15 ml) fish sauce
  • 1 tbsp (15 ml) low-sodium soy sauce
  • 1 tbsp (15 ml) hoisin sauce
  • 2 garlic cloves, finely grated
  • Cilantro leaves, for serving
  • Lime wedges, for serving
  • 2 cups (460 g) jasmine rice
  • 1 can (14 oz/398 ml) coconut milk
  • 1 ¼ cups (310 ml) water
  • ½ tsp salt

Instructions

  1. In a large bowl, combine all of the ingredients except for the cilantro leaves and lime wedges. Let marinate while you prepare the rice or cover and refrigerate overnight.
