Tofu Ratatouille

Ingredients

  • 3 bell peppers, various colours, seeded and diced
  • 1 onion, thinly sliced
  • 4 garlic cloves, finely chopped
  • 1/4 tsp red pepper flakes
  • 3 tbsp (45 ml) olive oil
  • 1 lb (450 g) firm tofu, cut into large dice (see note)
  • 2 plum tomatoes, diced 

  • 1/4 cup (60 ml) white wine
  • 1 zucchini, thinly sliced into half rings
  • 3 green onions, thinly sliced
  • 1/4 cup (60 ml) fresh flat-leaf parsley, finely chopped
  • 1 tsp fresh thyme, finely chopped

Instructions

  1. In a saucepan over medium-high heat, soften the bell peppers, onion, garlic and pepper flakes in the oil. Season with salt and pepper. Add the tofu, tomato and white wine. Continue cooking, stirring frequently until the tomatoes have broken apart, about 10 minutes. Add the remaining ingredients. Mix well and heat through. Adjust the seasoning. Serve over couscous, if desired.
