Stromboli’s Pizza Dough 


Ingredients

  • 3 1/3 cups (500 g) unbleached all-purpose flour (La Milanaise)
  • 1 packet (8 g) instant yeast
  • 1 1/2 tsp (7.5 ml) sea salt
  • 3/4 cup (180 ml) warm water
  • 1/3 cup (75 ml) milk
  • 3 tbsp (45 ml) olive oil
  • 1 tbsp sugar
  • 1 egg

Instructions

  1. In a large bowl, combine the flour, yeast and salt. Make a well in the centre of the flour mixture.
  2. In another bowl, combine the water, milk, oil, sugar and egg with a fork. Pour into the well of the dry ingredients and stir with a wooden spoon until the dough starts coming together.
  3. On a floured work surface, knead the dough for 5 minutes or until elastic.
  4. Cut the dough into 4 to 6 equal pieces. Shape each piece into a ball and oil lightly. Place the balls of dough on a baking sheet. Cover with plastic wrap and refrigerate for 12 to 24 hours.
