Maple Cheesecake Squares

The tartness of the cream cheese and the sweetness of the maple are in perfect harmony in this cake. Made using brown sugar and graham cracker crumbs, it is a very moist and tender dessert. Cut it into squares for easy transport to a family dinner.

Ingredients

  • 1 cup (140 g) graham cracker crumbs
  • 1 tbsp unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 cup (105 g) brown sugar
  • 1 egg
  • 1/2 cup (125 ml) milk
  • 1 tbsp (15 ml) vegetable oil
  • 1 block (250 g) cream cheese, cubed and softened
  • 1 tbsp unbleached all-purpose flour
  • 2 eggs
  • 1/3 cup (75 ml) maple syrup
  • 1/4 cup (60 ml) sour cream
  • 1/3 cup (75 ml) maple butter
  • 1/2 cup (50 g) roasted pecans, chopped

Instructions

  1. With the rack in the middle position, preheat the oven to 325°F (165°C). Butter an 8-inch (20 cm) square pan and line with a strip of parchment paper, letting it hang over two sides.
  2. In a bowl, combine the graham crumbs with the flour and baking powder.
  3. In another bowl, whisk together the brown sugar and egg. Pour in the milk and oil. Mix well. Add the dry ingredients and mix until the batter is smooth. Spread the batter out in the prepared pan.
  4. Bake for 22 minutes or until a toothpick inserted in the centre of the cake comes out clean. .
