Raita (Cucumber and Yogurt Salad)

Ingredients

  • 3 English cucumbers, peeled, seeded and diced
  • 1 cup (250 ml) plain yogurt (4% MF or higher)
  • 1/4 cup (60 ml) flat-leaf parsley, chopped
  • 2 tablespoons (30 ml) lime juice
  • Salt and pepper

Instructions

  1. In a bowl, combine all the ingredients. Season with salt and pepper. Refrigerate for 15 minutes.
