Ingredients

  • 10 chicken drumsticks, skin on
  • 4 tsp Cajun spice mix
  • 6 tbsp (80 g) brown sugar
  • ½ cup (125 ml) ketchup
  • 6 tbsp (90 ml) apple cider vinegar
  • 2 tbsp butter
  • 1 tbsp (15 ml) smoked paprika

Instructions

  1. With the rack in the middle position, preheat the oven to 375°F (190°C). Line the bottom of a baking dish with parchment paper.
  2. 2 Using a small sharp knife, starting at the least fleshy part of the drumstick, cut the flesh and tendons all around the bone. Using the knife, clean everything off the end of the bone. Hold the end of the bone in one hand. With your other hand, use the knife to push all of the meat up towards the fleshiest part; the flesh will remain attached to the bone and will form into a ball. Cut a small bit of flesh off the top of the drumsticks to help them stand up vertically. Sprinkle the spice mix over the skin of the drumsticks.
  3. Place the drumsticks standing up vertically, with the bone facing upwards, in the baking dish. Bake for 25 minutes.
