Cream of Sweet Potato, Apple and Clove Soup

Ingredients

  • 1 leek, white part only, chopped
  • 3 tbsp butter
  • 1 apple, peeled, seeded and cubed
  • 3 medium sweet potatoes, peeled and cubed
  • 1/4 cup (60 ml) white wine or chicken broth
  • 5 cups (1.25 litres) chicken broth
  • 1/8 teaspoon ground cloves
  • Apple slices, for garnish

Instructions

  1. In a pot over medium-high heat, soften the leek in the butter. Add the apple and sweet potatoes. Deglaze with the white wine.
  2. Add the chicken broth and ground cloves. Bring to a boil. Cover and simmer until the sweet potatoes are tender, about 20 minutes.
  3. Purée in a blender until smooth. Season with salt and pepper.
  4. Ladle the soup into bowls. Garnish with apple slices sautéed in butter, if desired
