Macaroni and Cheese
Ingredients
- 1 tbsp butter
- 1 tbsp unbleached all-purpose flour
- 1/2 cup (125 ml) milk
- 1 cup (100 g) elbow macaroni
- 1/2 cup (50 g) sharp orange cheddar cheese, grated
- 1/4 cup (60 ml) cheese spread
Instructions
- In a small pot over medium heat, melt the butter. Add the flour and cook for 1 minute, whisking continuously. Add the milk and bring to a boil, whisking constantly. Simmer for 2 minutes. Season with salt and pepper. Cover and set aside.
- Meanwhile, in a pot of salted boiling water, cook the macaroni until al dente. Set aside ¼ cup (60 ml) of the cooking water. Drain the pasta and return to the pot.
- Add the reserved cooking water, béchamel sauce, cheddar, and cheese spread and mix to combine. Continue cooking until the cheese has melted. Season with salt and pepper.
