Country Apple and Berry Tart
Ingredients
- 3 cups (750 ml) unbleached all-purpose flour, sifted
- 1 pinch of salt
- 2 tablespoons (30 ml) sugar
- 3/4 cup (180 ml) chilled unsalted butter, cut into cubes
- 2 eggs
- 1/4 cup (60 ml) ice water
- 1 cup (250 ml) sugar
- 2 tablespoons (30 ml) instant tapioca
- 4 cups (1 litre) mixed berries (cut large strawberries into quarters)
- 2 Royal Gala apples, peeled, cored and thinly sliced
- 1 tablespoon (15 ml) cornmeal
- Vanilla ice cream
- Strawberry¬–berry liqueur, such as Bagosse from the Magdalen Islands (optional)
Instructions
- In a food processor, pulse the flour, salt and sugar to combine. Add the butter and pulse briefly until the butter pieces are the size of peas. Add the eggs and water. Pulse until the dough just begins to hold together, adding more water if necessary. Remove the dough from the food processor and shape it into a disc with your hands. Wrap in plastic and chill.
- On a floured surface, roll the dough into a 46-cm (18-inch) in diameter disc.
