Soba Noodles with Pan-Fried Tofu

Ingredients

  • 3 tablespoons (45 ml) soy sauce
  • 3 tablespoons (45 ml) rice vinegar
  • 1 tablespoon (15 ml) lime juice
  • 1 tablespoon (15 ml) fish sauce (Nuoc Mam)
  • 2 teaspoons (10 ml) sugar
  • 1/2 teaspoon (2.5 ml) cornstarch
  • 1/2 teaspoon (2.5 ml) sambal oelek (or to taste)
  • 3/4 lb (375 g) semi-firm tofu, cut into large sticks
  • 1/2 lb (225 g) soba noodles
  • 1/2 cup (125 ml) cornstarch
  • 1/3 cup (75 ml) peanut oil (or vegetable oil)
  • 8 oz (227 g) white button mushrooms, quartered
  • 8 oz (227 g) shiitake mushrooms, quartered
  • 6 green onions, thinly sliced (white and green separated)
  • 1 teaspoon (5 ml) fresh ginger, finely chopped
  • 2 cloves garlic, finely chopped 

  • 4 cups (1 litre) bean sprouts
  • Salt and pepper 




Instructions

  1. Preheat the oven to 100 °C (200 °F) to keep the pan-fried tofu warm.
