Caramelized Onion Rings and Goat Cheese Salad
Ingredients
- 1/4 cup (60 ml) balsamic vinegar
- 1 tablespoon (15 ml) soy sauce
- 2 teaspoons (10 ml) brown sugar
- 1 large Vidalia onion, peeled and cut into three 3/4-inch (2-cm) thick slices
- 3 tablespoons (45 ml) olive oil
- 8 cups (2 litres) mesclun lettuce
- 1 log 125 g goat cheese, thinly sliced (soft surface ripened cheese)
- 8 long and thin baguette slices, grilled with olive oil
Instructions
- In a bowl, combine all the ingredients. Set aside.
