Olive Oil Mashed Potatoes
Ingredients
- 6 potatoes, peeled and sliced
- 2/3 cup (150 ml) olive oil, approximately
- Salt and pepper
Instructions
- Place the potatoes in cold salted water and bring to a boil. Cook until tender. Drain. Mash the potatoes, gradually adding the olive oil to get a creamy but firm purée. Season with salt and pepper. Do not overmix.
