Ingredients

  • 1 cup (150 g) unbleached all-purpose flour
  • 1/4 cup (25 g) cocoa powder, sifted
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/3 cups (225 g) dates, pitted and chopped (see note)
  • 2 tbsp (30 ml) boiling water
  • 3/4 cup (170 g) unsalted butter, softened and cubed
  • 1 egg
  • 1 tsp (5 ml) vanilla
  • 5 oz (140 g) 70% dark chocolate chunks

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Line two baking sheets with silicone mats or parchment paper.
  2. In a bowl, combine the flour, cocoa powder, baking soda, cinnamon and salt.
  3. In a food processor, purée the dates with the water until smooth. Add the butter and mix until creamy. Using a spatula, scrape down the sides of the food processor as needed. Transfer the mixture to another bowl. Add the egg and vanilla to the bowl. Whisk until smooth. Using a wooden spoon, stir in the dry ingredients. Add 3 oz (85 g) of the chocolate chunks and mix well.
  4. Using a 2-tbsp (30 ml) ice cream scoop, shape the dough into balls and arrange evenly spaced out on the baking sheets. Top with the remaining chocolate chunks, pressing down lightly. Freeze at this point, if desired (see note).
  5. Bake one sheet at a time for 12 to 14 minutes or until the cookies are baked at the centre but still soft. Let cool on a wire rack.
