Chicken Tikka Masala
Ingredients
- 1 tablespoon (15 ml) garam masala
- 1 tablespoon (15 ml) chili powder
- 1 teaspoon (5 ml) ground cumin
- 1 teaspoon (5 ml) ground turmeric
- 1/4 teaspoon (1 ml) ground cardamom
- 1 1/2 lb (675 g) skinless and boneless chicken thighs (or breasts), cut into cubes
- 1/2 cup (125 ml) roasted cashews
- 3 tablespoons (45 ml) olive oil
- 1 onion, finely chopped
- 1 jalapeño pepper, seeded and finely chopped
- 2 cloves garlic, finely chopped
- 1 teaspoon (5 ml) fresh ginger, finely chopped
- 2 tablespoons (30 ml) tomato paste, or to taste
- 1 large tomato, seeded and diced
- 1/2 cup (125 ml) 35% cream
- 1/2 cup (125 ml) 10% plain yogurt
- Salt and pepper
Instructions
- In a large bowl, combine all the ingredients. Add the meat and toss to coat thoroughly in the spice mixture. Set aside.
