Margarita Grilled Fish
Ingredients
- 1/2 cup (125 ml) lime juice
- 1/2 cup (125 ml) orange juice
- 1/4 cup (60 ml) olive oil
- 2 tablespoons (30 ml) tequila
- Grated zest of 2 limes
- Grated zest of 1 orange
- 1 1/2 pounds (675 g) tilapia fillets or other firm-fleshed white fish
- Salt and pepper
Instructions
- In a dish or large sealable plastic bag, combine all the ingredients. Add the fish and coat well with the marinade. Let marinate for 2 hours. Preheat the grill, setting the burners on high. Oil the grate.
- Reduce the heat to medium-high. Grill the fish for 2 to 3 minutes per side, depending on the thickness of the fillets. Serve with a green salad.
