Cucumber Tea Sandwiches
Ingredients
- 8 slices white or whole wheat sandwich bread
- 1/4 cup (60 ml) plain or chive cream cheese, softened
- 32 thin slices English cucumber (about 1/2 cucumber)
Instructions
- Using three quarter of the cream cheese, cover each bread slice.
- Using a 5-cm (2-inch) plain round cookie cutter, cut out 32 bread circles, avoiding the crust. On 16 circles, place a slice of cucumber and top with the remaining circles, cream cheese side down.
- Lightly cover the top of each sandwich with the remaining cream cheese and top with a second slice of cucumber.
- Serve the sandwiches with Niçoise Soup.
