Sausage, Spinach and Cheese Sandwiches
This original sandwich puts the spotlight on Italian sausage flesh, crumbled instead of using them whole. Also add spinach and mozzarella melted on top of the sandwich under the broiler. Serve this warm sandwich on a weeknight and the whole family will be thrilled.
Ingredients
- 4 mild or spicy Italian sausages, casings removed
- 1 small red onion, thinly sliced
- 4 cups (100 g) baby spinach
- 2 tbsp (30 ml) olive oil
- 1 garlic clove, finely grated
- 4 panini buns, each about 7 inches (18 cm) long
- 8 slices mozzarella cheese
- Mixed vegetable antipasto or marinated hot peppers, to taste
Instructions
- With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.
- Using your fingers, crumble the sausage meat over the baking sheet. Spread the onion out over the meat. Bake for 10 minutes.
- Meanwhile, in a bowl, combine the spinach, oil and garlic. Season with salt and pepper.
- On a work surface, cut the buns in half horizontally without going all the way through to the other side.
- Remove the baking sheet from the oven. Cover the inside of the buns with the sausage mixture. Place the buns on the baking sheet. Divide the spinach mixture among the breads, pressing down lightly. Place 2 slices of cheese on each sandwich. Bake in the oven for 3 minutes or until the cheese is melted.
- Top with the antipasto and close the sandwiches. Serve with green salad, if desired. Serve immediately.
