Nicoise Club Sandwiches
Ingredients
- 1 can 170 g flaked tuna in water, drained
- 2 tablespoons (30 ml) mayonnaise
- 2 green onions, finely chopped
- Pepper
- 4 slices whole-wheat bread
- 2 slices white bread
- 2 tablespoons (30 ml) oil-packed black olives, coarsely chopped (optional)
- 2 Boston or curly lettuce leaves
- Tomato slices
- 2 eggs, hard-boiled, sliced
- Toothpick
Instructions
- In a bowl, combine the tuna, mayonnaise and green onion. Season with pepper.
- Spread mayonnaise on one side of each slice of bread.
- On a slice of whole-wheat bread, spread some of the tuna mixture and garnish with olives. Cover with a slice of white bread. Layer the lettuce, tomato and egg. Finish with a slice of whole-wheat bread.
- Cut the sandwiches diagonally into triangles and secure with toothpicks.
