These potatoes are easy to prepare and are a great side dish to any meat or poultry.

- 8 potatoes, peeled
- 1/3 cup (75 ml) olive oil
- 1/4 cup (10 g) fresh chives, finely chopped
- 1 cup (100 g) strong cheddar cheese, grated
- 1/4 cup (30 g) breadcrumbs
- Pink peppercorn, crushed, to tasted

- With the rack in the middle position, preheat the oven to 375°F (190°C).
- On a work surface, cut the potatoes in half lengthwise. Turn them so they are flat-side down on the work surface. Using a knife, slice the potatoes without cutting completely through them (see note).
- In a bowl, combine the potatoes, oil and chives, making sure the oil coats between each slice in the potatoes. Season with salt and pepper. Transfer the potatoes to a non-stick or parchment paper-lined baking sheet. Bake for 35 minutes, basting the potatoes several times with the remaining oil.
- Sprinkle with cheese and breadcrumbs. Continue baking for 15 minutes or until the cheese is golden brown. Serve with meat or poultry, if desired.
