Tropical Fruit Salad with Vanilla Syrup

Ingredients

  • 1 mango, peeled, pitted and diced
  • 1/2 pineapple, peeled and diced
  • 1 can 14 oz (398 ml) whole pitted lychees, drained and halved
  • 1 cup (250 ml) fresh strawberries, sliced
  • 1 star fruit, sliced
  • 1 green apple, diced
  • 3/4 cup (180 ml) water
  • 3/4 cup (180 ml) sugar
  • 1 teaspoon (5 ml) vanilla extract

Instructions

  1. In a bowl, combine all the fruit.
  2. In a saucepan, bring the water and sugar to a boil. Cook for 2 to 3 minutes.
  3. The syrup will have thickened slightly. Remove from the heat and add the vanilla. Allow to cool before pouring into a small jug or bowl. Serve the fruit salad in pretty bowls and let each person add vanilla syrup, to taste.
  4. You can also add the fruit of your choice. Enjoy the winter season, the season of tropical fruit, to discover new ones.
