Citrus Oil
Ingredients
- The zest of 1 orange, cut into thin strips
- The zest of 1 lemon, cut into thin strips
- The zest of 1 lime, cut into thin strips
- 1 cinnamon stick
- 5 juniper berries
- 2 cups (500 ml) sunflower oil
- 2 sprigs fresh thyme
Instructions
- In a sterilized jar, combine the citrus zests, cinnamon and juniper berries. In a saucepan, heat the oil with the thyme for about 3 minutes. Remove the thyme and let cool. Pour the cooled oil into the jar and close tightly. Let the oil macerate for a few days in the refrigerator. Pass the oil through a very fine sieve or a cheesecloth. Pour into a pretty bottle. Seal. Store in the refrigerator. This oil is very suitable for flavouring fish, duck, poultry and salads dishes.
