Green Salad with Dates and Clementines
Ingredients
- 1 clementine, the juice only
- ½ lemon, the juice only
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 ml) soy sauce
- 2 tbsp fresh mint, finely chopped
- 2 cups (50 g) Boston lettuce
- 2 cups (50 g) baby spinach
- 3 clementines, peeled and sliced
- 12 dates, pitted and thinly sliced
- 1/4 cup (25 g) pecans, toasted and coarsely chopped
Instructions
- In a large bowl or salad bowl, whisk together all the ingredients.
