Ingredients

  • 1 1/4 cups (190 g) unbleached all-purpose flour
  • 1/4 cup (25 g) cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (160 g) brown sugar
  • 1 egg white
  • Small pretzels
  • 2 oz (55 g) dark chocolate, melted and cooled
  • Eye-shaped candies
  • Red chocolate candies (M&M-style)

Instructions

  1. In a bowl, combine the flour, cocoa powder, baking soda and salt.
  2. In another bowl, cream the butter and brown sugar with an electric mixer. Add the egg white and mix until smooth. With the machine running on low speed or with a wooden spoon, stir in the dry ingredients. Shape the dough into two discs with your hands. Cover in plastic wrap and refrigerate for 1 hour.
  3. With the rack in the middle position, preheat the oven to 350°F (180°C). Line two baking sheets with silicone mats or parchment paper.
  4. On a floured work surface, roll out one disc of dough at a time until ¼ inch (5 mm) thick. Using a round 2 ½-inch (6.5 cm) cookie cutter, cut out cookies. Reuse any dough scraps. Arrange the cookies spread out on the baking sheets. Lightly press two pretzels into the top of each cookie to create the reindeer antlers.
  5. Bake one sheet at a time for 12 to 14 minutes or until the bottoms of the cookies have darkened slightly. Let cool completely, about 30 minutes.
  6. For each cookie, dip the bottom of two eye-shaped candies (for they eyes) and one red chocolate candy (for the nose) into the melted chocolate and place on the cookie. Let set for 1 hour to ensure that the decorations stay in place. The cookies will keep for 1 week in an airtight container at room temperature or for 3 months in the freezer.
