Lemon and Orange Cake

Ingredients

  • 1 1/2 cups (225 g) unbleached all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (160 g) sugar
  • 1 lemon, zest finely grated
  • 3 tbsp (45 ml) lemon juice
  • 2 eggs
  • 1/4 cup (60 ml) milk
  • 3 tbsp (45 ml) orange juice
  • 6 tbsp (80 g) sugar

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter an 8-inch (20 cm) square pan and line it with a strip of parchment paper, letting it hang over two sides.
  2. In a bowl, combine the flour and baking powder.
  3. In another bowl, cream the butter with the sugar, lemon zest and juice with an electric mixer. Add the eggs, one at a time, and mix until smooth. With the machine running on low speed, add the dry ingredients alternating with the milk. Spoon the batter into the prepared pan.
  4. Bake for 25 minutes or until a toothpick inserted in the centre of the cake comes out clean.
