Hot Caramelized Onion Dip

A party is never complete without crudités and dip. This one is made with caramelized onions, cream cheese, cheddar and sour cream. Serve it still warm in the cooking dish. Also delicious with chips!

Ingredients

  • 2 1/2 cups (375 g) onions, chopped (2 to 3 onions)
  • 2 tbsp (30 ml) olive oil
  • 2 tbsp (30 ml) balsamic vinegar
  • 1/2 block (125 g) cream cheese, softened
  • 1 cup (100 g) cheddar cheese, grated
  • 1/2 cup (125 ml) sour cream

Instructions

  1. With the rack in the middle position, preheat the oven to broil.
  2. In a large skillet over medium-high heat, cook the onions in the oil, stirring almost continuously, until nicely browned, about 10 to 15 minutes. Add the vinegar and cook for 1 minute while stirring.
  3. Transfer the onions into a large bowl. Add the cream cheese, ¾ cup (75 g) of the cheddar cheese and the sour cream. Season with salt and pepper. Mix well. Transfer into a 2-cup (500 ml) baking dish. Top with the remaining cheddar cheese. Refrigerate at this point, if desired (see note).
  4. Broil in the oven for 2 minutes or until the cheese is golden. Serve the dip hot with chips, crackers and vegetable crudités, if desired.
