Ингредиенты

  • 1/2 red bell pepper, seeded and diced
  • 1 small onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp (5 ml) olive oil
  • 1 1/2 cups (270 g) quinoa, rinsed and drained
  • 1 lemon, zest finely grated and juiced
  • 2 1/4 cups (560 ml) water

Инструкция

  1. In a pot over medium heat, soften the bell pepper, onion and garlic in the oil. Add the remaining ingredients. Season with salt and pepper. Bring to a boil. Cover and simmer over medium heat for 12 minutes or until tender. Remove from the heat and let sit for 5 minutes. Adjust the seasoning. The quinoa can be served hot or cold.
