  • 1 recipe translucent Dim Sum dough
  • 10 oz (300 g) raw shrimp, peeled, chopped
  • 3.5 oz (100 g) bamboo shoots, cut into julienne
  • A pinch of salt
  • A pinch of sugar
  • 2 teaspoons (10 ml) untoasted sesame oil
  • 1 egg

  1. In a bowl, mix all the filling ingredients.
  2. Place about 15 ml (1 tablespoon) of filling in the centre of each disc of dough, moisten the edges, close in a half-moon and pinch the edges to seal in the filling.
  3. Steam the dumplings for about 6 minutes.
