Ingredients

  • 3 slices fresh pineapple, each 1/2 inch (1 cm) thick, peeled and cut in half
  • 1 clementine, washed and cut into slices ¼ inch (5 mm) thick (see note)
  • 1 vanilla bean, split lengthwise and seeds scraped
  • 1/3 cup (80 g) cane sugar
  • 3 cups (750 ml) white rum

Instructions

  1. In a 4-cup (1 litre) airtight glass jar, place all of the ingredients. Seal tightly. Shake the jar. Let macerate for 2 weeks at room temperature, shaking the jar a few times (see note).
