Greens with Goat Cheese and Fruits

Ingredients

  • 1/4 cup (60 ml) slivered almonds
  • 2 small zucchini, thinly sliced lengthwise
  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (125 ml) sunflower oil
  • 2 teaspoons (10 ml) balsamic vinegar
  • 1 teaspoon (5 ml) honey
  • 2 tablespoons (30 ml) fresh chives, chopped
  • Salt and pepper
  • 4 cups (1 litre) arugula or baby spinach
  • 1 log 200 g goat cheese, crumbled
  • 1 cup (250 ml) fresh raspberries

Instructions

  1. In a nonstick skillet, toast the almonds. Set aside.
  2. In a ridged skillet, grill the zucchini in the olive oil. Set aside.
  3. In a bowl, whisk together the oil, vinegar, honey, chives, salt and pepper.
  4. Divide the greens on 6 plates, then the cheese, zucchini, raspberries and almonds. Drizzle with the vinaigrette and serve.
